Flaky Scones with Grand Marnier-Citrus Glaze

This flaky and slightly sweet baked good is perfect as a breakfast bread, or even as a mid-day snack.

Scones with Grand Marnier-Citrus Glaze

Ingredients
  

  • 1 1/2 lb Bread Flour
  • 1 1/2 lb Cake Flour
  • 6 oz Sugar
  • 0.5 oz Salt
  • 3 oz Baking Powder
  • 1 lb 3oz Butter
  • 7 oz Eggs
  • 1lb 5oz Milk
  • 1 Cup Powdered Sugar
  • 3-4 tbsp Fresh Lemon Juice
  • 1 tbsp Grand Marnier
  • 1 tbsp Lemon Zest

Instructions
 

  • Preheat oven to 400 degrees Fahrenheit, and grease baking sheet (or line with parchment paper)
  • Measure out all ingredients
  • Sift the flour, sugar, salt, baking powder into a large mixing bowl
  • Using a knife, slice the cold butter into 1/2 inch cubes
  • Scatter the cubed butter across the dry ingredients. Using a fork, pastry blender or your hands, *cut * the butter into dry ingredients. Continue until the mixture looks like cornmeal.
  • Combine the butter, eggs, and milk. Mix well.
  • Add the liquid ingredients to the dry ingredients. Mix until the ingredients are combined and forms a soft dough.
  • Lightly knead the dough.
  • Flatten dough to 1/2 inch thick.
  • Using a cookie cutter, cut into squares.
  • Place on greased sheet pans.
  • Egg wash tops.
  • Bake at 400 degrees Fahrenheit for 15-20 minutes.
  • While scones are baking, zest 1 medium size lemon
  • Whisk powdered sugar, lemon juice and Grand Marnier until smooth to create your glaze. Your consistency should be thick, but pourable.
    If glaze is too runny, add more powdered sugar a tsp at a time until you reach your desired consistency.
    If glaze is too thick, add more lemon juice a 0.5 tsp at a time until you reach your desired consistency.
  • Whisk lemon zest into glaze.
